This may be one of the healthiest meals on the planet. If you are unfamiliar with Quinoa - it is a nutty grain from South America and is high in protein. It is super healthy. You can find it in the rice aisle at your local supermarket and they even sell it at Costco. My kids LOVE this recipe. If you ask Taya her favorite meal - she will tell you Quinoa and Black Beans. They ask for this on a regular basis. I serve this alone as the whole meal...but we are not really into meat. I have made it without cilantro when I did not have time to get to the store and it was still good, but it is best with the cilantro for that extra flavor. Enjoy!

Ingredients:
1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro
Directions:
1.Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
2.Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
3.Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

I made this tonight and it was so delicious! I added shredded cheese and sour cream to mine and it was really good. Next time, I think I will grill some chicken and slice some avocados and serve it in tortillas, yum!
Thanks! I am excited to try it. My sister just told me about quinoa. I just made some craisin muffins with it. I still have lots of quinoa and wasn't sure what to do with it. I am so excited to make this recipe.
